Ingredients:-
6 flour tortillas
1 cup cheddar cheese, grated
1 cup mozzarella cheese, grated
Refried beans:
1 can pinto beans, rinsed, drained amd slightly mashed
1/2 cup tomato puree
4 jalapeños, finely chopped
1/4 cup coriander, finely chopped
1 tablespoon burrito seasoning
1 teaspoon chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon cumin powder
Salt to taste
2 tablespoons oil
Instructions:-
Refried beans:
In a pan, heat oil and add tomato puree and cook for 2 minutes.
Now add mashed pinto beans, jalapeños and coriander.
Add burrito seasoning, chili powder, turmeric powder, cumin powder and salt.
Mix well and cook for 4-5 minutes.
Chimichanga:
Preheat the air fryer for 3 minutes on 200 degree C.
Spoon the refried bean mix in the centre of the lightly warmed flour tortilla, and add cheese on the top.
Fold the short ends in, then fold one long side over the filling and gently push to ensure the fold is tight before rolling up the remainder of the burrito.
Now with the help of a brush, apply oil on both the sides and place it in an air fryer for 10 minutes.
Serve hot.
Tips:
If you dont have air fryer, you can deep fry it too.

You can have it with sour cream or queso.
