1 large eggplant, grilled, and peeled
2 tablespoons tahini
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
2 tablespoons chopped parsley
1/2 teaspoon pomegranate molasses (or jam)
Salt to taste
1 teaspoon pepper powder
1/2 teaspoon cumin powder
Pinch of paprika, to garnish
About 6 mini peppers, cut in half and seeds removed
Few pomegranate arils, to garnish
💚 Instructions 💚
In a blender, add grilled eggplant, tahini, parsley, pomegranate jam, lemon juice, extra virgin olive oil, salt, pepper powder, and cumin powder. Blend it until smooth.
Spoon Baba Ganoush into the cavities of mini peppers.
Garnish with paprika & pomegranate arils.
Chill and serve.
