💚 INGREDIENTS 💚
For Soup:
1 tablespoon oil
1 teaspoon ginger paste
1 teaspoon green chili paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
2 teaspoon cumin-coriander powder
1/2 teaspoon asafetida
Salt to taste
1 teaspoon lemon juice
1 tablespoon jaggery
1/4 cup french beans, chopped
1/4 cup carrots, chopped
1/4 cup zucchini, chopped
1/4 cup baby corn, chopped
1 tablespoon coriander, chopped
1 tablespoon gram flour + 3 tablespoons water
400 ml coconut milk
500 ml water
Others:
Boiled noodles
Fried noodles
Roasted peanuts, crushed
Coriander, chopped
Chili oil
Chili flakes
💛 INSTRUCTIONS 💛
In a pan, heat oil.
Add in ginger paste and green chili paste. Sauté for few seconds.
Now add all the masalas and sauté until aromatic. Add in little water and cook for few minutes.
Further add in all the veggies. Mix well.
Pour the rest of the water along with with jaggery and lemon juice.
Let it cook for about 5-6 minutes.
Now mix gram flour slurry with coconut milk.
Reduce the heat, add in coconut milk and mix well.
Cook it until the soup becomes little thick for about 5 minutes by stirring constantly.
Assembling:
In a deep plate/bowl, place some boiled noodles. Pour soup over it.
Top it with fried noodles, crushed peanuts, coriander, chili oil and chili flakes. And Enjoy.
