Mexican Sabudana Khichdi

💛 INGREDIENTS 💛


  • 1 cup Sabudana + 1 cup water (Soak overnight)

  • 2 tablespoons oil

  • 1 teaspoon cumin

  • 1/2 cup green, red & yellow capsicum, chopped

  • 1/2 cup sweet corn, boiled

  • 1/4 cup coriander, chopped

  • 1 green chili, slit

  • 1 teaspoon taco seasoning

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon red chili powder

  • Salt as per taste

  • 1 teaspoon lemon juice

  • Sour cream or Greek yogurt

  • Grated cheese to garnish



💚 INSTRUCTIONS 💚


  • In a pan, heat oil and add cumin seeds.

  • Add in green chili, capsicum and sweet corn. Sauté for few seconds.

  • Now add sabudana, salt, turmeric powder, chili powder, taco seasoning. Mix until well combined.

  • Now add in lemon juice and coriander. Mix well and cook for 5 minutes.

  • Grate some cheese over khichdi and serve it with sour cream or Greek yogurt or any dip of your choice.
