💛 INGREDIENTS 💛
1 cup Sabudana + 1 cup water (Soak overnight)
2 tablespoons oil
1 teaspoon cumin
1/2 cup green, red & yellow capsicum, chopped
1/2 cup sweet corn, boiled
1/4 cup coriander, chopped
1 green chili, slit
1 teaspoon taco seasoning
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt as per taste
1 teaspoon lemon juice
Sour cream or Greek yogurt
Grated cheese to garnish
💚 INSTRUCTIONS 💚
In a pan, heat oil and add cumin seeds.
Add in green chili, capsicum and sweet corn. Sauté for few seconds.
Now add sabudana, salt, turmeric powder, chili powder, taco seasoning. Mix until well combined.
Now add in lemon juice and coriander. Mix well and cook for 5 minutes.
Grate some cheese over khichdi and serve it with sour cream or Greek yogurt or any dip of your choice.
