💛 Ingredients 💛
For Bhaji:
Potato- 3 piece
Cauliflower- 100 grams
Capsicum- 50 grams
Eggplant- 50 grams
Peas- 50 grams
Water- 2 cups
For Gravy:
Tomato- 3 pieces, chopped
Butter/oil- 3 tablespoons
Coriander- 0.5 cup
Salt to taste
Chili powder- 2 teaspoon
Turmeric powder- 0.5 teaspoon
CuminCoriander powder- 2 teaspoons
Garam masala- 0.5 teaspoon
PavBhaji masala- 2 teaspoon
Assembling:
French loaf- 1 piece
Butter to spread on bread
Shredded cheese- 1 cup
Chopped tomatoes for garnish
Chopped capsicum for garnish
Chopped coriander for garnish
Chopped purple cabbage for garnish
💚 Instructions 💚
For Bhaji:
n a pressure cooker, add the cauliflower, potatoes, capsicum, eggplant, peas; and pour in the water, and stir well. Secure the lid and pressure cook to 3 whistles.
Now take a pan, add butter and put chopped tomatoes in it. Let it cook for 2-3 minutes. Now add all the masalas and let the gravy cook for about 5-7 minutes.
Meanwhile, open the pressure cooker and mash all the veggies with a potato masher. (Veggie mixture should be in a runny consistency).
Now add mashed veggies into the gravy and mix well. Add coriander, 1 tsp of butter, and let it cook for few more minutes.
Assembling:
Cut French loaf into slices and place it on an oven tray.
Put the tray in the preheated oven, and bake till the bread turns crisp.
Remove and spread some butter on each slice.
Spread cooked bhaji on each bread slice.
Top with grated cheese.
Garnish with chopped tomato, capsicum, purple cabbage and coriander.
Serve hot.
