Shahi Tukda Cannoli


💛 Ingredients 💛


For Rabdi:

  • 2 liter full fat milk

  • 200 ml sweetened condensed milk

  • 2 tablespoons corn starch + 1 tablespoon milk

  • 200 ml whipping cream

  • 1 tablespoon pistachio slivers


For Cannoli:

  • 8 slices of bread

  • Ghee for frying

  • 2 tablespoons honey + 1 teaspoon water


💚 Instructions 💚


For Rabdi:

  • In a wide heavy bottom pan, heat milk.

  • Simmer till it reduced to 1/3rd by constantly stirring.

  • Then add condensed milk and corn starch.

  • Simmer for another 10 minutes or it reaches desired consistency.

  • Add whipped whipping cream to it.

  • Mix half of the pistachios slivers.

  • Set it in the refrigerator for 30 minutes.


For Cannoli:

  • Take all the slices of bread and cut it round from the center with the help cookie cutter.

  • Now slightly press all the bread rounds or roll them to flatten.

  • Take a cannoli tube (or cannelloni pasta) and wrap the flattened bread around a cannoli tube sealing the edges with a little dab of water/milk. Firmly press the edge of the bread that you just folded over.

  • Now fry all the cannolis evenly in hot ghee until golden brown.

  • Now with the help of a brush, brush all the fried cannolis with honey mixture.


Assembling:

  • Take a cannoli.

  • Fill it with rabdi mousse.

  • Garnish with some pistachios slivers and serve.
