INGREDIENTS:-
2 cups sweetcorn
1 large potato, roughly chopped
1/2 stick celery
2 jalapenos, roughly chopped
2 cups vegetable stock/water
1 cup milk of your choice
Salt,pepper and chili powder to taste
Chaat masala to taste (optional)
1 teaspoon lemon juice
Few drops of hot sauce
Garnish:-
1 cup sweetcorn, boiled
1 tablespoon butter
Salt, pepper, chili powder, chat masala to taste
1 teaspoon lemon juice
INSTRUCTIONS:-
In a pressure cooker, mix sweetcorn, potato, celery, jalapeno, and vegetable stock/water. Make 4-5 whistles. And then let it cool.
Meanwhile, in a pan, heat butter, add boiled sweetcorn into it. Add in salt pepper, chili powder, chaat masala, and lemon juice. And give it a quick mix. Set this sweetcorn mix aside.
Once the cooker is cool, open it and transfer everything into a blender.
Blend everything in a blender until smooth and then sieve it into a pot.
Add salt, pepper, chili powder, chat masala, milk, hot sauce, and lemon juice into it. Mix well.
Boil for a minute and turn off the gas.
Serve hot chowder in a bowl, top it with sweetcorn mix, jalapeno slices, lemon slices, and grated cheese if you want.
