Vegetable Oats Upma


💛 Ingredients 💛

  • 1 cup rolled oats

  • 2 cups water

  • 2 tablespoons oil

  • 2 tablespoons ghee

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon cumin

  • 1 tablespoon split urad dal

  • 10-12 curry leaves

  • 1 tablespoon green chilies, chopped/slit

  • 2 tablespoons capsicum, chopped

  • 2 tablespoons carrots, chopped

  • 2 tablespoon tomato, chopped

  • 1 tablespoon coriander, finely chopped

  • 1 teaspoon salt (or as per your taste)

  • 1 teaspoon lemon juice

  • 1 teaspoon sugar (optional)

💚 Instructions 💚

  • In a pan, heat oil and ghee.

  • Add urad dal, mustard seeds, and cumin. Let it crackle/splutter.

  • Add in all the veggies and saute for 1 minute.

  • Add curry leaves and oats. Keep mixing for few minutes.

  • Slowly add water into it by stirring constantly to avoid lumps.

  • Add salt, sugar, and lemon juice.

  • Mix well and let it cook for 4-5 minutes.

  • Add coriander and serve hot with your favorite chutney.
